Quantity and Texture
Please note that quantity remains constant, but weight may vary due to smoking texture. We offer three different textures:
1. *Ready to Eat*
- Shelf-life: 7 hours outside the freezer
- Well-smoked but not dry
- Soft and juicy
- Ideal for immediate/local consumption
- Requires immediate freezing to keep fresh
2. *Dry (Ready to Eat)*
- Shelf-life: 24 hours outside the freezer
- Drier than ready-to-eat but not export standard
- Can last up to 24 hours outside the freezer
- Ideal for travel (not more than 24 hours)
- Crunchy dry and can be eaten right away
- Requires immediate freezing after 24 hours
3. *Export Standard*
- Shelf-life: A month/two outside the freezer
- Dry and hard
- Requires soaking to soften before cooking (35-45 minutes before cooking)
- Ideal for long travel time
- Doesn't require immediate freezing for more than a month
- Export standard meat usually comes smaller due to extreme dryness
